Chicken Enchilada Bowl

Makes 1 serving of a complete meal with carb

You will need…

  • 1/3 lbs. ground chicken
  • 1 cup frozen cauliflower rice
  • 1 bell pepper
  • 1/2 small white onion
  • pico de gallo
  • shredded lettuce
  • 1/2 cup black beans
  • 1/2 avocado or 1/4 cup guac or 1/4 cup cheese
  • taco seasoning
  • enchilada sauce
  • oil spray
  • salt
  • pepper
  • garlic powder
  • onion powder

Directions:

Pre-heat oven to 425F. Place frozen cauliflower rice (with nothing on it) on a baking sheet for about 20-30 minutes or until crispy. Remove from the oven and spray with oil spray, garlic powder, onion powder and salt and place back in the oven for 5 minutes. 

While the cauliflower rice cooking, coat a pan with oil spray and place on medium-high heat. Add your ground chicken and cook until no longer pink in center. Add taco seasoning and enchilada sauce to taste.

Roughly chop your peppers and onion. In a separate pan (or same pan as chicken), coat pan with oil spray and place on medium-high heat. Cook for about 5 minutes or until soft. Add salt and pepper to taste.

Assemble all ingredients in a bowl.
