Classic Chicken Tacos

Makes one serving. Counts as full meal with carb.

You will need…

  • 4-5 oz. shredded chicken
  • Taco seasoning to taste
  • 2 hard or soft corn tortillas (I like Siete grain free tortillas)
  • 1 pepper
  • 4 Tbsp. pico de gallo
  • 2 Tbsp. shredded cheese
  • 2 Tbsp. of plain greek yogurt
  • 4 tsp. cilantro aioli or 1/2 avocado
  • Cilantro for garnish
  • Optional: sriracha

Directions:

Slice pell pepper to eat on the side. You can also add onions and saute for a warmer version!

Toss chicken in taco seasoning. Distribute ingredients between 2 tacos.

Note: You can also make this into a salad by putting ingredients over a bed of lettuce and crushing up tortillas (or chips) into the salad. Or skip the tortillas and make it a carb free meal!
