Collagen Sweet Potato Pancakes

Makes 1 serving

(collagen is totally optional)

You will need…

  • 1 small- medium sweet potato
  • 2 eggs
  • 1 scoop collagen
  • 2 Tbsp. flax seeds
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • pinch sea salt
  • 2 tsp. oil, butter (1 for cooking 2 for topping)
  • sugar free maple syrup for topping ( I recommend ones using monk fruit or stevia like lakanto)

Directions:

Microwave sweet potato for 3 minutes or until soft. Let cool for 5 minutes and remove skin. Add all ingredients to a blender and blend until combined.

Heat a skillet on medium heat and add a tsp. butter. Pour 2 Tbsp. on skillet for each pancake

Heat pancakes for a few minutes on each side until golden brown (will not bubble like your typical pancake). Top with 1 tsp. butter and sugar free maple syrup.
