
Makes about 3-4 servings. Count as full meal with carb serving.
You will need…
- 1 pound ground beef
- 1/4 onion, diced
- 1 large clove of garlic, minced
- 1 Tbsp. oil
- 1 can diced tomatoes with garlic, basil and oregano, no salt added (or any can of diced tomatoes will work)
- 1 can white beans
- 1 packets chili seasoning
- onion powder and garlic powder to taste
- 3-4 cups cauliflower rice
- optional: top with a scoop of 4% or less fat greek yogurt
Directions:
Heat oil in a pot and add garlic and onion.
Once onions are translucent add ground beef and saute until fully cooked.
Add in canned tomatoes, beans, chili seasoning and onion/garlic powder. Let simmer for about 20 minutes.
While chili is cooking, heat up cauliflower rice in the microwave or on stove top.
Microwave: follow instructions on package.
Stove top: add cauliflower rice to pan with oil spray and cook until warm.
Serve 1/3 portion chili over 1 cup of warm cauliflower rice. Top with greek yogurt in place of sour cream if desired!
