
Makes 1 serving of a complete meal with carb
You will need…
- 2 cups shredded cabbage or coleslaw mix
- a few heaping Tbsp. plain greek yogurt OR for dairy free unsweetened plain coconut yogurt (I like this one)
- boneless pork chop
- 1/2 cup potatoes, cubed
- oil spray
- seasonings: garlic powder, onion powder, salt, pepper, paprika
Directions:
Pre-heat oven to 400F. Toss potato cubes with oil spray, salt and pepper and place on a baking sheet. Bake in the oven for 30 minutes or until crispy or cooked to your liking.
Coat a pan with oil spray and place on medium-high heat. Generously season your pork chop with salt, pepper, garlic powder, onion powder and paprika.
Once the pan is hot, add your pork chop and cook on one side for about 4 minutes or until a golden crust starts to form.
Flip pork chop and place entire pan in the oven with the potatoes, lowering the oven heat to 375. Cook pork for 15 minutes or until no longer pink inside. The potatoes should be finished around the same time as the pork chop.
While the potatoes and pork are in the oven, Toss your cabbage with yogurt and season with salt, pepper, garlic powder and onion powder.
