Egg Roll in a Bowl

You will need…

Makes 3 servings

  • 1 pound ground beef, chicken, turkey, shrimp
  • 1 garlic clove, chopped
  • 1/2 large onion, chopped
  • 2, 14.oz bag of shredded cabbage
  • 1 cup shredded carrots
  • 1 tsp. sesame oil (total)
  • 5 Tbsp. coconut aminos
  • 1.5 Tbsp. rice vinegar
  • 1.5 tsp. fresh ginger, chopped
  • scallions, chopped for garnish
  • sesame seeds for garnish
  • sriracha to taste

Directions:

Add oil spray on medium heat to a pan.Add garlic and onion and cook for a few mins until translucent. Add in meat and cook until fully cooked. Add cabbage and carrots to the pan. Add coconut aminos, rice vinegar and ginger to the pan. Cook for a few more mins until veggies are soft. Drizzle with 1 tsp. sesame oil. Remove from the pan and top with chopped scallions, sprinkle with sesame seeds and add some sriracha to taste.
