
You will need…
- 2-3 eggs
- 1 small apple
- 1 tsp. coconut oil
- cinnamon to taste
- 1/2 tsp. vanilla extract
- 1 Tbsp. nut butter (almond or cashew works well but you can use any)
- 1 low carb “crepe” – pictured above – available at Walmart, Costco or Instacart (you can also just put apple bake over a little plain greek yogurt if you don’t have these crepes.)

Directions:
Chop one apple into small cubes. Place in a small pot with coconut oil, a few dashes of cinnamon and vanilla extract and let cook until softened to your liking. Add a few splashes of water if apples start sticking to the pan.
While thats cooking scramble a few eggs.
Once apples become soft shut off heat. Place your crepe on a non-stick pan to let it get hot for about 30 seconds. Flip your crepe and add the apple mixture and nut butter in line a straight down the middle. Then fold each side towards the middle to form a crepe.
Have your apple bake crepe with your side of eggs for a delicious breakfast!
