Garlic & Herb Potato Squares

Makes one serving (carb + fat). Add protein and veggies for a complete meal.

You will need…

  • 1 small potato
  • 1-1 1/2 Tbsp. butter
  • seasonings: salt, pepper, onion powder, garlic powder, parsley to taste (1/2 tsp. of each works well!)

Directions:

Pre-heat oven to 400 F. Wash potato and pat dry. Cut the ends off the potato and the edges to make it look like a rectangle (picture 1 below).

Then cut the potato into squares about 1/4-1/2 inch thick (picture 2).

Make vertical slits 1/2 way through the potato without cutting all the way through (picture 3).

Flip the potato over and cut vertical slits 1/2 way through the potato without cutting all the way through (picture 4).

Note: place an object like a chop stick on the side of the potato you are cutting to prevent from cutting the potato all the way through (pictures 3 & 4).

Melt butter in a bowl and add seasonings. Line baking sheet with parchment paper. Brush potato squares with butter on each side. and place on a the baking sheet.

Bake in the oven at for 20 minutes. Flip potatoes and place back in the oven for another 20 minutes.

After 40 minutes, put the oven on broil for a few minutes if you want to make potatoes extra crispy. Remove from oven and enjoy!
