
Makes 1 serving (full meal with carb)
You will need…
- 4-5 oz. greek style meatballs
- 2 Tbsp. tzatziki sauce (or store bought)
- 1 cup cucumbers
- 1 cup cherry tomatoes
- 2 Tbsp. red onion
- 1-2 oz. feta
- 1/2 cup chickpeas
Meatballs:
- 1 pound ground chicken
- 1 Tbsp. olive oil
- 1 small clove garlic, minced
- 1 Tbsp. oregano
- 1 Tbsp. parsley
- 2 oz. feta
- salt and pepper
Directions:
Make meatballs by pre heating the oven to 425F. Add all ingredients to a bowl and mix together well with hands. Roll into small meatballs and bake in the oven for about 20 minutes or until internal temp reaches 165F.
Make homemade tzatziki sauce while meatballs are in the oven or buy store bought sauce.
Chop cucumbers and red onion and slice tomatoes in half lengthwise.
Wash and drain chickpeas.
Assemble all ingredients in bowl and enjoy!
