Harvest Bowl

Makes 1 serving of a complete meal with carb

You will need…

  • 4-6 oz. chicken breast
  • 2 cups roasted kale
  • 1/2 pear, chopped
  • 1/2 cup butternut squash
  • 2 tbsp. pumpkin seeds
  • oil spray
  • Optional: 1-2 tbsp. dressing of choice

Directions:

Pre-heat oven to 400 F. Place butternut squash on a baking sheet, spray with oil spray and season with salt. Place in the oven for 30-35 minutes or until cooked to your liking, ideally giving squash a toss half way through cooking.

For the kale, spray with oil spray, season with salt and massage kale. Place on a baking sheet and bake for 20 minutes or until a little crispy.

Assemble all ingredients in bowl.

Note: can also keep kale raw and just massage with dressing for a quicker options. Buy pre-cut butternut squash for a time savor!
