
Makes 1 servings (full meal without carb)
You will need…
- 1 pound ground meat (any kind but I like turkey!)
- 1 clove garlic, minced
- 1/4 onion, chopped
- 1/4 cup coconut aminos
- 1 tbsp. fish sauce
- Fresh ginger grated to taste – I do about 1/2 tsp. (or ground works too!)
- 1 cup shredded carrots
- Oil spray
Per Serving
- 4 romaine pieces for lettuce wraps
- 1 cup frozen cauliflower rice
- Toppings: green onions (scallions) and drizzle of sesame oil (1 tsp.)
Directions:
Pre-heat your oven to 400°F. Place frozen cauliflower rice on a baking sheet lined with parchment paper and heat in the oven until warm (about 20 minutes.)
Note: you can also just heat up in the microwave or stove top if you prefer! I like how it comes out best in the oven since it dries it out the most but you can also make the 3 servings all at once in the oven and quickly heat up on the stove or in the microwave to warm when ready to eat!
While the cauliflower is cooking, add oil spray to a pan over medium heat. Once hot, add your garlic and oil and cook for a few minutes until onions are translucent and garlic is a little browned. Add your ground meat and cook until there is no more pink. Then add your carrots, ginger, coconut aminos and fish sauce and cook for about 5 minutes until carrots become softer.
Place the cauliflower rice and meat mixture in your lettuce wraps, top with scallions and a drizzle of sesame oil and enjoy!
