You will need…
- Lettuce (romaine lasts well for meal prep)
- 1/2 cup canned or roasted chickpeas
- Pre-cooked chicken
- Chopped onion
- Shredded carrots
- Chopped tomato
- Dressing: 1 small clove minced garlic, juice from
- 1/4 lemon, 1 Tbsp. tahini, 1 tsp. olive oil, salt &
- pepper to taste, optional 1 tsp. maple syrup.
Directions:
Mix all dressing ingredients together to make the dressing. Add dressing to the bottom of your mason jar. Then add non-leafy green veggies like tomatoes, onion, and carrots. Add your chicken, chickpeas and lettuce on top.
Note: Feel free to mix and match veggies, proteins, carbs and dressings to make any salad. Just be sure to put the dressing on the bottom and lettuce on top đŸ™‚
