Roasted Chicken with Maple Bacon Brussels Sprouts

Makes 1 servings (full meal without carb)

You will need…

  • 4-6 oz. chicken breast
  • 2-3 cups shaved Brussels sprouts
  • 1-2 slices bacon, cut into 1 inch pieces
  • 1 Tbsp. oil (or oil spray)
  • Oil spray
  • 1 tsp. maple syrup (can sub for honey)
  • seasonings: salt, pepper, garlic powder, onion powder, paprika

Directions:

Pre-heat oven to 425F. Line a sheet pan with parchment paper.

Add your Brussels sprouts to your sheet pan and toss with oil. Add a sprinkle of salt, chopped uncooked bacon and maple syrup to Brussel sprouts and mix together well. Place in the oven for about 25 minutes or until crispy and cooked to your liking.

While veggies are cooking, coat a pan with oil spray and place on medium-high heat.

Generously season your chicken breast with salt, pepper, garlic powder, onion powder and paprika.

Once the pan is hot, add your chicken and cook on one side for about 4 minutes or until a golden crust starts to form.

Flip chicken and place entire pan in the oven with the Brussel sprouts, lowering the oven heat to 375. Cook chicken for 15 minutes – the Brussels sprouts should be finished around the same time as the chicken.
