Roasted Red Pepper Dip

You will need…

  • 2 red bell peppers
  • 1 clove of garlic
  • 1/4 cup olive oil
  • 1/2 cup walnuts or almonds
  • juice of 1/2 lemon
  • salt and pepper to taste

Directions:

Pre-heat oven to 450F. Cut peppers in half lengthwise and remove core and seeds. Place peppers inside face down on a baking sheet lined with parchment paper or tin foil. Drizzle with avocado oil or olive oil and season with salt and pepper. Roast in the oven for 30 minutes or until peppers are starting to char and are soft.

Place roasted pepper in a blender with remainder of ingredients. Blend for about 20 seconds. You want to make sure it’s evenly blended but do not over blend.

Note: Store in fridge.
