Shrimp Mango Lettuce Cups

Makes one serving

You will need…

  • 8 large pre cooked-frozen shrimp
  • 1/4 cup mango, chopped
  • 1/4 cup cherry tomatoes
  • 2 Tbsp. red onion
  • 1-4-1/2 avocado
  • lettuce cups
  • 2 tsp. olive oil
  • 1 Tbsp. lemon juice salt and pepper to taste

Directions:

Defrost shrimp in cold water for 5-10 minutes.

Chop shrimp, mango, tomatoes, onion and avocado.

Place in a bowl and add oil, lemon juice, salt and pepper.

Place mixture in lettuce wraps and enjoy!
