You will need…
- 3/4 cup shredded rotisserie chicken
- 1-2 celery stalks, chopped
- 2 Tbsp. diced onions
- 1 Tbsp. mayo
- 1 tsp. dijon mustard (optional)
- Lettuce leaves: eg, romaine or butter lettuce cups
- seasonings: salt & pepper to taste
Directions:
Add chicken, celery, onion, mayo, mustard, salt and pepper to a bowl and mix together.
Stuff chicken salad into the center of the lettuce leaves and enjoy.
Feel free to top with hot sauce for a spicy kick.
Note: to make this recipe even easier you can buy a pre-made rotisserie chicken or use leftover chicken from previous meals.
