Simple Kale Tahini Salad

Makes 3-4 servings. Counts as veggie and fat.

You will need…

  • 1 bunch of kale (I used dinosaur kale)
  • 1 Tbsp. apple cider vinegar
  • 1 lemon, juiced
  • 1 large clove garlic, minced
  • 4 Tbsp. tahini
  • 2 Tbsp. olive oil
  • 1 tsp. raw honey
  • salt and pepper to taste
  • optional: nutrition yeast or parmesan cheese to taste

Directions:

Wash kale and remove stems. Chop kale into small pieces.

In a bowl whisk together lemon juice, garlic, tahini, olive oil, honey, salt and pepper until evenly combined to make dressing.

Add vinegar and kale to a large bowl and massage dressing into kale for a few seconds. Then massage in dressing until kale has wilted.

Optional: add nutritional yeast or parmesan to taste on top or lightly toss into salad.

Pair with a protein for a complete carb-less meal and enjoy!
