Spaghetti Squash Meat Sauce Boat

Makes 4 servings

You will need…

  • 2 spaghetti squash
  • 1 pound ground beef
  • About 2 cups jarred marinara sauce (no sugar added)
  • Seasonings (optional): garlic powder, onion powder, oregano

Directions:

Pre-heat oven to 425F. Cut spaghetti squash down the middle lengthwise. Scoop seeds out and place spaghetti squash on a baking sheet facing down. Add water to the baking sheet so it is just covering the bottom. Bake for about 45-60 minutes or until you can easily poke skin with a fork.

You can also make this recipe quicker by cooking spaghetti squash in the microwave. Poke holes in spaghetti squash and cook in the microwave for 12-15 minutes, depending on the size of the squash! You will know your squash is ready when you can pierce skin easily with a fork. Make sure to not over cook. When fully cooked, cut in 1/2 and scoop seeds out. Shred spaghetti squash strands with a fork.

While spaghetti squash is in the oven add oil to a pan and cook your ground beef. Once the ground beef is fully cooked add marinara sauce and seasonings to taste.

When spaghetti squash is done cooking remove from the oven and create spaghetti strands by scraping the squash with a fork. Top 1/2 your spaghetti squash with 1/4 meat sauce and enjoy!
