
Makes 2 servings
You will need…
- 1 bag shirataki noodles
- 1 Tbsp. sesame seed oil
- 2 cloves garlic, minced
- shrimp, un-cooked (depends on size, look at label for 30g protein per serving)
- 1 1/2 Tbsp. scallions
- 3 Tbsp. coconut aminos
- 2 Tbsp. sriracha
- 1 1/2 tsp. ginger or ginger paste
- 3 Tbsp. rice vinegar
- 1/2 cup each broccoli, green beans and shredded
- carrots
- 2 Tbsp. cashew butter
- juice 1/2 lime
- onion powder, red peper flakes and garlic salt to
- taste
- 1 egg
Directions:
Add sesame oil and garlic to a pan. When garlic browns add shrimp and cook for a few minutes. Slowly add in scallions, coconut aminos, sriracha, ginger, rice vinegar, veggies, cashew butter and lime juice while mixing together well. Push veggies and shrimp to the side, add in shirataki noodles (rinse, drained and cut) to the empty part of the pan and whisk an egg into the noddles. Then mix noodles in with the veggies and shrimp and enjoy.
