Stuffed Acorn Squash

Makes 4 servings (each serving is a full meal with carb)

You will need…

  • 2 acorn squash
  • 1 pound ground turkey
  • 1, 8-10 oz. container of mirepoix mix
  • 1, 8 oz. container of mushrooms (any kind)
  • 1 Tbsp. avocado oil
  • Seasonings: salt, pepper, cumin, paprika, garlic powder, onion powder to taste (I use 1/2 tsp. of each but add more or less as desired)

Directions:

Pre-heat oven to 425F. Wash acorn squash and cut it in half lengthwise. Remove seeds, spray with oil and season with salt and pepper. Place on a baking sheet and put in the oven inside facing up for about 45 minutes or until soft when poked with a fork.

While squash is cooking add avocado oil to a pan on medium heat and cook mirepoix mix for a few minutes. Chop up mushrooms, add to the pan and cook for another few minutes. When veggies are soft add ground turkey and sauté until fully cooked. Season ground turkey and veggies with spices.

Stuff 1/4 of ground turkey and veggie mixture into 1/2 acorn squash for a serving. It will probably overflow but that’s okay 🙂 Enjoy.
