Sweet Option:
- 2-3 eggs
- 1/2 sweet potato
- 1-2 Tbsp almond butter (any nut butter works)
- 2-5 Tbsp. cup berries
- cinnamon
Savory
- 2-3 eggs
- 1/2 sweet potato
- 1/4-1/2 avocado
- sea salt
- red pepper flakes
Note: To store sweet potato slices place in fridge for up to 4-5 days. Place in the toaster to re-heat!
Directions:
Sweet potato toast – cut ends off sweet potatoes. slice lengthwise into 1/4″-1/2″ slices and place on a baking sweet with parchment paper. Bake in the oven at 425 F for about 20 minutes.
Sweet – top 2-3 slices of sweet potato toast with 1-2 Tbsp. almond butter. Add a few berries and cinnamon on top and pair with 2-3 eggs on the side.
Savory – cook 2 -3 sunny side up eggs. Mash 1/2 avocado and add a sprinkle of sea salt. Top 2-3 slices of sweet potato toasts with avocado, eggs and top with red pepper flakes.
