Bell Pepper Stuffed Buffalo Chicken

Makes one serving

You will need…

  • 4-5 oz. shredded rotisserie chicken
  • 1 stick celery, chopped
  • 2 Tbsp. onion, chopped
  • 1-2 Tbsp. buffalo sauce
  • 1-2 slice of cheese or 1/4-1/2 avocado on top

Directions:

In a bowl mix together chicken, celery, onion and buffalo sauce.

Cut the top of the pepper off, slice down the middle lengthwise and remove seeds. Stuff boats with buffalo chicken.

Optional to make warm place in the oven for a few minutes on broil. If using cheese add first before you heat up.
